Brae reprezinta viziunea chefului si proprietarului Dan Hunter. Calatoria culinara a lui Dan l-a purtat in jurul globului si in bucatariile unora dintre cele mai aclamate restaurante, inclusiv un post de bucatar sef la Mugaritz, Spania. Inainte de a-si deschide propria afacere, Dan a petrecut sase ani la conducerea bucatariei hotelului Royal Mail din Dunkeld. Aici si-a pus la punct sistemul de cultivare bio, aducand restaurantului prestigioasele trei stele. In decembrie 2013 a deschis restaurantul Brae.

Ambalajul produselor congelate consta din cutii izolante din styrofoam sau din pungi termo-izolante in care se pun baterii cu gel de racire. Astfel se asigura protectia si calitatea produselor in timpul transportului.

Acesta metoda de ambalare respecta normele HACCP in ceea ce priveste pastrarea temperaturii de refrigerare (intre 0° C si + 7° C) in interiorul ambalajului protector, pentru maximum 24 de ore.

Conform normelor europene, temperatura de pastrare a alimentelor congelate trebuie sa fie de -18°C sau mai scazuta, cu exceptia perioadei de transport si livrare.
